1 rotisserie chicken, shredded
1 1/2 bags of coleslaw mix (or 3/4 head of cabbage, chopped)
1 bunch of green onions, diced
1 bunch of cilantro, chopped
2 ramen noodle packets (crush up the noodles to sprinkle on the salad & reserve the seasoning packets for the dressing)
Optional: toasted sesame seeds
Dressing:
1/3 cup vegetable or canola oil
1/3 cup (maybe a little less) sesame oil
1/3 cup (maybe a tad more) rice vinegar
1/4 cup sugar
1 tablespoon (give or take) soy sauce
Splash of fresh lemon juice (according to taste)
Ramen noodle seasoning packet (1 or 2, according to taste)
A bit of minced garlic

Made this today and use Napa cabbage - I love its delicate flavor. I also added toasted sesame seeds as well as sliced almonds. So Yummy and fast!
