Cafe Rio

However you like it - burrito or salad.

Tomatillo Dressing
1 package Hidden Valley Ranch dressing mix
1 cup Mayonnaise
1 generous cup chopped cilantro
2 cloves garlic
3 fresh tomatillos
1/3 cup buttermilk
1/4 teaspoon cayenne pepper

Blend until smooth in a blender or food processor.

Rice
4 teaspoons chicken bouillon
4 teaspoons minced garlic
1/2 bunch cilantro
1 can diced green chilies
3/4 teaspoon salt
1 tablespoon butter
1/2 onion, chopped
3 cups rice (not instant)

Put chicken bouillon, garlic, cilantro, diced green chilies, salt, butter & onion into a blender & puree until smooth. Poor into saucepan & add 3 cups water + 2 tablespoons & bring to a boil. Add rice & simmer for 30 minutes.

Pork Barbacoa
5-6 pounds pork roast
1 tablespoon cumin
1 cup brown sugar
12 ounces hot taco sauce
20 ounces Coca Cola

Place roast in a crock pot & add water halfway up roast. Cook on low for 12 hours. Drain out the water & add the remaining ingredients, then cook for 4 more hours. Shred the pork & cook for 2 more hours.

Serve in a tortilla with salsa, sour cream, fresh guacamole, cheese & lots & lots of fresh cilantro as desired - or top on a bed of shredded lettuce for a salad.

I usually add a cup or two of salsa to the pork. yum.
