Croissant French Toast

Mike made this for my birthday & it was absolutely amazing. My new favorite breakfast {to be eaten sparingly- otherwise, pretty sure I'll need to buy some new pants}!

4 croissants – cut in half lengthwise
2/3 cup low fat milk
3 large eggs, lightly beaten
1/3 cup orange juice
2 T butter
1 t sugar
1 t vanilla
1 t grated orange peel
¼ t cinnamon
1/8 t nutmeg

Melt butter on a skillet or in a large frying pan at medium-high heat.

In a large bowl, mix together all ingredients except croissants. Beat until well combined.

Drag croissants through the mixture & flip until completely coated. Cook about 3 minutes on each side, or until golden brown.

Serve with butter, maple syrup, or fruit & whipped cream.

Serves 4.

I have to think of a special occasion to make this for...or just make one up because this sounds divine! Way to go, Mike!
